So last night, (Wednesday) we didn't have a softball game so I decided to get creative and make a new recipe. B asked what we were having for dinner and I said something new! He didn't sound too enthused... But anyways I got a recipe online for a macaroni and ground beef skillet. kind of like a hamburger helper but healthier and gluten free. So I came home and thought, what could I have with the skillet... HOMEMADE BISCUTS! So started the skillet dish, and got out my new 500 GF recipe book and found a great corn based biscut recipe. I had all of the ingridients thanks to Henry's, Trader Joes and Herbie's! So off i went and made about 12 little patties of biscuts, put them in the oven for about 15 min, waited until they browned and then brushed them with a little butter... The were FABULOUS! Even B liked them. Which he is off and on with all of my GF products. He said the skillet was "different" but could be improved with more spices next time. =) Perfect, he didn't hate it and he even had a suggestion and a second helping!
So that was my experiment last night, and it made so much, I have leftovers for lunch today... What should I make tonight? I am still thinking but I am really getting into this GF cooking, now to make more leaps and bounds in the baking dept. Maybe I will let my sister try that for the 4th of July and I will follow in her footsteps....?! We will see what happens next...
